Carrots are the ultimate side dish. Whether they are roasted, steamed or sautéed they are most people’s favorite vegetable. Carrots are sweet with a little savory and they pair well with just about any entree. Lemon butter glazed carrots is the perfect way to give those boring bag of carrots a little upgrade.
Now one thing I do love about this recipe is how easy it is to put together. All the ingredients you need are probably sitting in your fridge right now. It’s so easy it’s pretty much fool-proof.
It starts with steaming the carrots, then tossing them in the lemon sauce. That is all she wrote! The zesty lemon sauce adds a little bada bing bada boom to the sweet carrots. The freshness of this dish is what makes it so special. Pairs well with chicken, steak, pork or even seafood.

Now, let’s talk about this lemon-butter glaze. The zesty and delicious glaze comes together in under five minutes. The coconut aminos adds a little sweetness which balances the tart of the lemon juice. While the garlic and cilantro leaves add freshness and flavor

Steamed carrots tossed in a zesty lemon butter sauce.
- To begin, fill a deep skillet with water about 1/3 of the way and bring it to a boil. Season the water with a good amount of salt (about 1/2 a teaspoon). Add the carrots to the pan and cover the pan about half of the way. Lower the heat and simmer the carrots for 10-15 minutes or until the carrots are tender. Drain the carrots and set them aside.
- In the same pan, add the brown butter ghee and the garlic. Sauté the garlic for about a minute until it’s fragrant (do not burn it). Now add the coconut aminos, cilantro and lemon juice to the pan and whisk to combine. Return the carrots to the pan and toss to coat the carrots with the sauce.
- Serve immediately.
