Lamb chops marinated and seared to perfection



1 tbsp. avocado oil

1 tsp. herbs de Provence

1/2 tsp. salt

1/4 tsp. turmeric powder


2 4-6 ounce lamb chops

1 tbsp. ghee

2 garlic cloves


1 purple onion (sliced)

4 ounces cherry tomatoes

2 tbsp. avocado oil

salt and pepper


1 12 oz package of riced cauliflower and carrots (riced cauliflower alone works well)

1 tbsp. melted ghee

1 tsp. garlic powder

1 tbsp. freshly chopped cilantro

salt and pepper


First, stir together ingredients for the marinade. Now, pat lamb chops dry with a clean paper towel, transfer to a mixing bowl and pour over the marinade. Cover and transfer to the fridge. Marinate the lamb chops for 6 hours to overnight.

To start, preheat the oven to 400˚F. Now, toss the tomatoes and onions with avocado oil and sprinkle with salt and pepper. Transfer to the oven and roast for 25 to 30 minutes.

When the oven timer has 20 minutes left, remove the lamb chops from the fridge and heat 1 tablespoon of ghee in a castiron pan (10-12 inches will work) until it starts to smoke. Add the lamb chops and turn the heat down to medium-high. Sear the chops for ~ 5 minutes on each side. Peel and smash the garlic cloves and add them to the pan. Transfer the pan to the oven and finish cooking for 5-7 minutes (basting with the pan juices every couple minutes). Remove the onions, tomatoes, and lamb chops from the oven and tent the chops with foil so they can rest.

Now, steam the riced cauliflower and carrots in the microwave according to the package instructions (about 5-6 minutes). Transfer the steamed cauliflower and carrots to a food processor. Add ghee, garlic powder, and cilantro to the food processor and pulse until smooth. Season with salt and pepper to taste and continue to pulse until well combined.

Serve with roasted onions and tomatoes and lamb chops. Finish with a drizzle of the pan juices from the lamb chops.


You can use butter in the cauliflower mash if you are not Paleo.

You can also steam a small head of cauliflower in place of the 12oz package of riced cauliflower.
