The perfect date night in entrée. Fresh salmon steaks seared and glazed with a rich and simple maple garlic sauce.

1 lb. salmon steaks – 2 salmon steaks (or 2 salmon fillets

salt and pepper

2 tbsp. grass-fed brown butter ghee or just ghee (you can also use grass-fed butter if you choose)

4 garlic cloves -finely minced

1/4 cup grade A maple syrup

crushed red pepper flakes )

To begin, preheat your oven to 450˚F.

Now, heat the ghee over high heat in an oven-safe or castiron skillet. Pat the salmon dry with a clean paper towel and season the fish with a few pinches of salt and pepper.

Transfer the fish to the heated skillet and sear for about 3 minutes. Now, flip the fish, add the garlic and maple syrup and baste the fish with the sauce. Transfer the skillet to the oven and bake the fish for 7 minutes. Now, remove the skillet from the oven and baste the fish with the sauce in the pan. Then, turn the oven to broil and continue to cook the fish for 3-5 minutes to add some color.

Let the fish rest for a couple minutes and serve with sautéed vegetables and mashed potatoes or cauliflower purée.
