There is nothing better than a delicious dessert on the patio during the beautiful summer evenings. And let me tell you, this paleo coffee ice cream is exactly what you need in your life! It is creamy, delicious and makes the perfect treat on a warm day.
I’m more of a “salty” than “sweet” kind of girl. But I mean you can’t go wrong with ice cream. It is such a universally comforting dessert. I don’t think I’ve ever met anyone who doesn’t love ice cream. If you’re one of those people, I’m sorry but how? The only way I can understand that is if you had a terrible memory attached to ice cream or you have an allergy. If none of those things apply to you and you still don’t like ice cream, then you’ve never had a good scoop of ice cream.
What I love about this recipe is you can make it with or without an ice cream maker. But, because I’m low-key obsessed with my Cuisinart Pure Indulgence Ice Cream Maker, its what I’m going to be using. But, if you do not have an ice cream maker, you can definitely just whisk the mixture together and then freeze it until it’s solid.
My favorite thing about this recipe is it’s incredibly versatile. You can simply omit the cold brew coffee and then add in your favorite flavor. I absolutely love coffee ice cream so this had to be the first thing I made in my ice cream maker.
Other flavor additions for Paleo Ice Cream:
In order to create different variations and flavors of paleo ice cream, you can simply omit the cold brew coffee and just make the ice cream base (coconut cream, coconut sugar, vanilla, and egg yolks. From then, you can use any add-ins you desire.
Try these flavor combinations and up your ice cream game to a whole new level.
- Fruit preserves/jam
- Almond or Cashew butter
- Matcha powder
- Frozen fruits
Rich, creamy and delicious ice cream made with just 5 ingredients. It is the perfect way to treat yourself after a long day. Not a fan of coffee ice cream? Make the base and use other flavor add-ins to create the perfect treat you will enjoy.
4 cups coconut cream
1 cup of coconut sugar
2 tsp. pure vanilla extract
4 egg yolks
1/2 cup cold brew coffee
*First, if you can’t find coconut cream, you can use coconut milk. Just put 4 the cans of coconut milk in the fridge for a few hours to let it chill. The coconut cream and the coconut water will separate. The cream will settle at the top of the can.
Before you begin, let all of the ingredients sit on the countertop until they reach room temperature.
Now, add all the ingredients to a large mixing bowl and whisk until the mixture is smooth.
If you’re using an ice cream maker, follow the manufacturer’s directions. Then transfer the ice cream to a container and freeze it for 2-3 hours. Serve with chocolate shavings and enjoy!
If you are not using an ice cream maker, transfer the mixture to a metal bowl and freeze the ice cream for 30-45 minutes. Then, beat it with an electric hand mixer. Repeat this process until you can’t easily mix the ice cream anymore. Serve it with chocolate shavings or keep it in the freezer for later.
