2 pasture-raised eggs
WHAT YOU WILL NEED:
A small saucepan
an ice bath (half ice, half water)
To begin, Bring a small saucepan of water seasoned with a few pinches of salt to a boil. Lower the heat to low and use a slotted spoon to gently add the eggs to the water. Increase the heat back to boil, cover the pan and immediately set a timer for 6 – 6 1/2 minutes (depending on how runny you want the yolk).
Once the timer goes off, immediately transfer the eggs to an ice bath (a large bowl with equal parts ice and cold water) for about a 2 minutes or cool to touch.
Peel the eggs and enjoy them over avocado toast, a salad or a bowl of ramen.
